From Rum to Chocolate: UNH Non-Credit Summer Courses Offer Food Adventures from Around the Globe

WEST HAVEN, CONN. – If you can’t travel to Europe, Africa or the Caribbean this summer, you can experience their food, drink and culture at the University of New Haven. The University’s Hospitality and Tourism Management program will offer five “food and drink adventure courses” for adults focusing on everything from rum to chocolate.

The non-credit courses, offered on the main campus at 300 Boston Post Road, will be taught by UNH faculty. All will feature tastings and some will involve cooking.  The courses, which meet one day a week, from July 9 through Aug. 2, take place from 6 to 9 p.m.

The day the courses are offered and the topic they will cover include:

  • Monday: Wine Appreciation The course will be taught by chef Jeffry Trombetta, whose cooking is featured on eHow.com.  The course will feature wine and food pairings and tastings.
  • Tuesday: The World of Rums Taught by Christopher Gentile, a restaurant consultant and former café owner, the class will discuss and taste rums from the Caribbean, Europe and Africa and discuss how to pair them with food.  The rums will also be used to flavor food and students will be taught how to serve them – hot or cold.
  • Wednesday: The World of Tapas, Also taught by Gentile, the course will focus not only on the Spanish origins of tapas but on modern day fusion tapas.  Each session will include two tapas dishes paired with two cocktails and will explore innovative cooking techniques that make the menu look and taste flavorful.
  • Thursday: Four-Course Gastronomy Also taught by Gentile, the course will spend one night each on the cuisines of Spain, Italy, France and the United States. Two of the classes will involve preparing and eating the food. Students in the class will be asked to share their own recipes. 
  • Friday: The Origins of Chocolate Taught by Nickelle Cooper, who has a master’s degree in hospitality and tourism from UNH, the class will involve tasting chocolates from around the world.  Participants will learn about where chocolate comes from, how it is processed and its political history.  Students in the class will also have a chance to make chocolate.
